Vegan French toast
Thanks to an incredible blend of almond milk and flour, vegan French toast is a thing! You can take thick slices of bread (even day-old) and soak them in the mixture. Sear them on your pan until the crust forms. You might not even miss the eggs.
- Six slices of ciabatta bread (day-old), sliced around ¾-inch thick
- One cup almond milk
- One tbsp maple syrup, plus a little more for serving
- Two tbsp millet flour (or whole wheat or spelt)
- One tbsp nutritional yeast
- One tsp cinnamon
- ¼ tsp freshly ground nutmeg
- Coconut oil, for your pan
- One pinch of salt
- Vegan butter
- Powdered sugar
- Maple syrup
- Fresh fruits
- Whisk together the maple syrup, almond milk, flour, cinnamon, nutritional yeast, nutmeg and a pinch of salt in a small bowl.
- Place the bread carefully in a dry and shallow dish (with equal sides) that can hold all the bread.
- Slowly pour the thick mixture over your bread, and then flip or lift the bread to coat each side evenly.
- Over medium heat, heat some coconut oil in a big skillet.
- Once your pan is hot, add all the bread slices and gently cook for a couple of minutes per side, until they are golden brown.
- Serve with a dab of vegan butter, powdered sugar, maple syrup, and fruit.
Banana and Coconut Pancakes
These tasty vegan coconut milk pancakes along with banana and passion fruit topping could not be simpler. They are ideal for a breakfast with friends and family
- 150 gm plain flour
- Two tsp of baking powder
- Three tbsp of golden caster sugar
- 1-2 bananas (should be thinly sliced)
- Vegetable oil, for frying
- 400 ml coconut milk
- Two passion fruits
- Sift the baking powder and flour into a small bowl, and stir in two tablespoons of sugar and one pinch of salt.
- Pour all coconut milk into your bowl, whisk gently to mix in fat (if any) which has separated, and then measure out about 300 ml into your jug.
- To make a creamy and smooth batter, stir the milk gently into your flour mixture. You can also whizz everything in your blender.
- Then heat a flat griddle or shallow frying pan and brush it carefully with oil.
- Use two tablespoons of this batter to make one pancake, and fry two at a time – more than two would make it hard to flip them.
- Now push four to five pieces of banana into every pancake and cook them until bubbles begin to appear on the surface; also, makes sure the edges are dry.
- Keep in mind that they would be a bit more delicate compared to egg-based pancakes; this is why you should turn them over very carefully while cooking the other side for about one minute.
- Repeat this process to make about 8 to 10 pancakes.
- In the meantime, put the remaining sugar and coconut milk in a pan.
- Then add one pinch of salt and allow the mixture to simmer until it thickens to a single consistency.
- You can use this as a tasty sauce for your pancakes and spoon over a few of those passion fruit seeds.
